Easy Breezy Salsa Chicken
I made this dish last week with my boyfriend and we loved how it was simple, healthy and tasty. We ate it alongside refried beans and tortilla chips with chopped lettuce and sour cream as garnishes. Enjoy!
Ingredients:
2 skinless, boneless chicken breasts, thawed
half of a packet of taco seasoning
1 cup chunky salsa
1 cup grated Monterey Jack or Pepper Jack cheese
OPTIONAL: chopped lettuce, sour cream and refried beans
Directions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Spray a 13X9" baking pan with cooking spray and cut both chicken breasts in half.
3. Place chicken in pan and sprinkle on taco seasoning
4. Pour salsa over the chicken and bake 30-40 minutes, or until pink is gone.
5. Sprinkle cheese over chicken and broil on low until cheese is bubbly and lightly brown.
