Morning Glory Muffins

A few years ago when I went to visit my Aunt in Texas she made these fabulous muffins and they haven’t left the front of my recipe box since. This mixture of ingredients probably sounds slightly odd, but they come together beautifully for a healthy-ish breakfast food that the entire family will love.

Ingredients:
• 2 cups flour
• 1 1/4 cup sugar
• 2 teaspoons baking soda
• 3 teaspoons cinnamon
• 1/2 teaspoon salt
• 1 1/2 cup finely grated carrots
• 1 1/2 cup finely grated apples
• 3/4 cup coconut
• 1/2 cup chopped dates
• 1/2 cup chopped pecans
• 3 eggs, beaten
• 1 cup vegetable oil
• 1/2 teaspoon vanilla

Instructions:

1. In a large bowl, sift together flour, sugar, baking soda, cinnamon and salt.

2. In another bowl combine carrots, apples, coconut, dates and pecans. Mix well.

3. Add eggs, oil and vanilla to carrot mixture. Mix well.

4. Stir into dry ingredients until moistened.

5. Spoon into greased muffin tins.

6. Bake at 375 degrees for about 20 minutes or until toothpick comes out clean.
