White Chocolate Chip and Cranberry Scones

This cold January weather that inevitably continues makes me want to do two things; drink coffee and bake. Luckily these two things can be enjoyed simultaneously with this lovely scone recipe. This recipe came together when I was experimenting with common scone ingredients that typically would not be combined in this fashion. I took a chance with the ingredients, baked them up and found them to be delicious. I hope you find the same.

Ingredients:

1/4 cup brewed coffee

3 tablespoons heavy cream

2 large eggs, lightly beaten separately

1 teaspoon vanilla extract

3 1/4 cups baking mix (like Bisquick)

1/2 teaspoon cinnamon

1/2 cup sugar

1 cup white chocolate baking chips

1/2 cup dried cranberries

3 tablespoons sugar

 

Directions:

1. Preheat oven to 350 degrees.

2. In a bowl, combine coffee, two tablespoons cream, one egg and vanilla extract. Set aside.

3. In another mixing bowl, combine baking mix, cinnamon, sugar, white chocolate baking chips and dried cranberries.

4. Add wet ingredients to dry ingredients and work into a crumbly dough.

5. On a lightly floured surface, form dough into a nine- inch disk (about 1/2-inch thick).

6. Cut dough into 12 wedges and place on an un-greased cookie sheet.

7. In small bowl, combine one tablespoon cream and remaining beaten egg.

8. Brush tops of scones with egg mixture and sprinkle with sugar.

9. Bake for 17 to 20 minutes or until golden brown.

10. Serve with coffee for a delicious breakfast.
