Grandpa Jake's Black Forest Cherry Cake
This recipe is an easier version of a cake my sister and I used to make every Christmas with my grandpa, so it is absolutely a family favorite! I remember my grandpa (who was a wonderful cook) used to talk about how using a box cake brought more moisture to the cake and was a lot easier. This cake is delicious and beautiful.
Enjoy!
Ingredients:
1 box chocolate cake mix (with additional ingredients needed according to box)
1 21-oz. can cherry pie filling
2 cups whipping cream
1/4 cup sugar
1 teaspoon vanilla
1 bar chocolate (Hershey's milk or dark chocolate)
Maraschino cherries
Directions:
1. Generously grease and flour two 9-inch round layer pans.
2. Mix cake batter according to box directions, and pour batter into the two pans.
3. Bake according to box directions. When inserted toothpicks come out clean, take cakes out, and let them cool completely in the pans.
4. Place whipping cream, sugar and vanilla in a medium bowl. Beat ingredients with a mixer until stiff peaks form. Cover, and refrigerate whipped cream until you are ready to assemble the cake.
5. With a vegetable peeler, slice along chocolate bar to form chocolate curls for cake garnishing.
6. Place one cake layer upside down on serving plate. Spread a little more than half of the can of cherry pie filling and 1 cup of the whipped cream across the bottom cake layer.
7. Place the second cake layer top-side up on first layer of cake. Spread top of the cake with remaining cherry pie filling.
8. Frost sides and top of cake with remaining whipped cream.
9. Garnish cake with chocolate curls and maraschino cherries.
10. Refrigerate until serving time.
