Sarah’s Apple Walnut Salad with Maple Dressing
When reading this recipe, some may think the ingredient combination is odd, but the bite of the Gorgonzola cheese pairs nicely with the sweetness of the dressing and the apples. I inherited this wonderful recipe from my cousin Sarah, but changed it slightly when I discovered my love for Gorgonzola cheese in salads.
Enjoy!
Dressing:
1/4 cup mayonnaise
1/4 cup regular maple syrup
3 tablespoons white wine vinegar
2 teaspoons sugar
½ cup olive oil
Salad:
5 oz. bag baby greens
2 Granny Smith Apples (peeled, cored and sliced)
½ cup toasted walnuts, chopped
1/4 crumbled Gorgonzola cheese
Directions:
1. Place baby greens in a large salad bowl.
2. Place apple slices, walnuts and Gorgonzola cheese on top of baby greens.
3. In a separate bowl, combine mayonnaise, syrup, white wine vinegar and sugar.
4. When first dressing ingredients are mixed well whisk olive oil into the dressing mixture.
5. Drizzle dressing over salad and enjoy!
